Description
This oolong tea, known as ‘blue tea’, is made with care in our workshop in the Vallée du Blavet. The production process is inspired by Taiwanese mid-mountain oolong teas; entirely hand-made, the leaves undergo various stirring processes to limit oxidation at the edges of the leaves. A light roasting gives it a delicious toasted note.
Oolong teas, known as ‘blue teas’, are complex to make and require precise expertise. Blue tea’ is tea whose leaves have been partially oxidised and/or roasted. The leaves used to make this tea are hand-picked and include the bud, plus one or two leaves taken from our Baijiguan blue tea cultivars.
Uninfused, the leaves appear twisted and regular (the leaf is worked in the baozhong spirit). They have a light nose.
The infusion of this Breton blue tea has a golden/amber colour. It has a sweet, gourmet flavour with a long finish. Its texture is supple and velvety. Its aroma is floral and fruity, with a certain complexity.
